This dish work great like side dish for Holiday dish “ROSTED DUCK”, what was published by me before.
This dish was found by me in “The Essential Vegetarian Cookbook” and then I often use this recipe, modified by me, like side dish for main dishes. Especially Roasted Duck dish is very tasty to do with Crispy Potato Wedges.
– ¼ cup of olive oil;
– Hot Hungarian Paprika (for taste);
– 2 tablespoon fresh rosemary springs, or 2 teaspoon dry rosemary;
– Salt (for taste).
Clean, Scrub and pat dry 8-10 fresh potatoes. Cut them in wedges. Brush wedges with olive oil, sprinkle with salt. Use Hot Hungarian Paprika for taste and toss thoroughly with rosemary springs. Bake in hot preheated oven 425F approximately 40-45 minutes, turning frequently until potato wedges are golden and crisp.
