“The Peasant’s Dish”
a rather uncomplicated Assyrian Dish my Mom recently showed me how to make comprised of peppers (of any colour), tomatoes, eggs – and of course speckled with a pinch of salt and pepper.
  

To cook, simply grab a frying pan, add peppers and tomatoes to your liking cook them down until they kind of melt together, add eggs and cook until they appear to be “over easy” do not mix. One egg per person (plus the peppers and tomatoes) is plenty per serving.  Cheese can also be added (though I’d be wary, this meal is messy enough to eat as it is)

Serve over bread and with tea!  This meal is quick and easy (and looks like you put a ton of time and effort into it;))  so enjoy!
